It takes 40-50 Liters of sap to make one litre of syrup.

We don’t force the process through mechanical mean but rely on traditional wood stove reducing processes. It takes approximately 10—12 hours to render each batch of sap into Old School Sap Co Syrup.

This is the time honoured way of sap reduction that goes back to the early days of the settlers. . There always a degree of smoke that infuses our maple syrup.
